This error happens when two users are editing the same record at the same time. The first user to save has no issue, but then the second user to save gets this error. In this context “user” can include the system, or an integration, a script, a workflow, etc. From the error message, this is happening on after record submit, so I would look to see if you have multiple scripts or workflows trying to make changes to the invoice on the after record submit event.
